It is fine to include a person's character in what they already wrote. Like you said, if someone says that they were in Coruscant then feel free to say that you saw them running around in Coruscant. You cannot, however, say that you saw them going on a ship, saying something to you, or etc. Stuff like that. Get what I'm saying?
Feel free to ask others if you can collaborate with them in their story, then you two can get a specifically laid out rule that you both can follow when writing your stories. Basically, don't add or remove things to another person's story unless they allow you, and even then, make sure that you consult them about it before doing anything very drastic as it is still their character.
Other than that, it's perfectly fine to be in the same place at the same time. Just not changing things too much.
As a side note, just be careful to remember what particular timeline someone is in and you are as well. You don't want to be in the Clone Wars and accidentally change someone's story in the Empire-era. Just be careful and you should be fine!
That's why you're allowed to have multiple OCs. That way you can be in at least two different eras and have a wider pool of other players to collaborate with.
