Too much and the tire just slides and doesn’t go anywhere. You need the right amount of friction between the tire and the road.

Tire manufacturers are paid large sums of money to figure that out. It is not wise to question their assessment, unless you have gone to college and paid large sums of money to analyze the friction properties of rubber.
