Yup! Given the current texture for the seed, I'm hoping a new crop of oats (Or something of the sort) is added. Forlorn hope, but it could happen!

I'm thinking something along the lines of a monstera plant with 4-5 stages of growth, from less than one block tall to over five blocks of height.

Remember, the Sniffer was extinct, so we'll have to think along the lines of extinct and/or exotic.

That's true. A new vine and/or tree would be cool. I do think a palm tree or something like that but more old like (English...) would be cool since they don't have one yet.

True, but if it was extinct, it would have to be a pretty monstrously wild palm tree, and I think that the mangroves already inhabit the "monstrously wild" category.

There's also the possibility Mojang will make something new up, for example, a tree with non-flammable wood (like the Crimson & Warped fungi) from many eons ago, with black bark and massive proportions.

In my personal opinion, a black wood is long overdue, so I'm hoping they go for something along the above lines.

Possibly, but remember they are adding bamboo blocks, and I believe they won't add two wood types in this update.

They've done it before in the 1.16 update, and in my personal opinion, bamboo doesn't really count as a new wood type since it was already in the game, but I concede the point that they might not share my views.

Yes, they did do that in 1.16, but that was an anomaly. I don't think bamboo is really a new wood type per say but it is new items that would come with a new wood type, so I think the Devs might consider it a new wood type. Also I think the new plants will have something special about them, possibly like the speed weed and jump shrooms in Minecraft legends. Or I still think something like a Venus fly trap would be really cool, but we'll just have to wait and see.
